Rifleman's Hunting Frock

I've seen a few posts about folks making a hunting frock but, I'm looking to make one out of buckskin and I have not seen this part mentioned. (If someone has, I missed it)
What is the ideal leather weight for a project like this?
What is the best animal source? Goat, Deer, Elk?

I'm partial to brain tan deer, but unless you tan it yourself, it can be quite expensive.
You may want to take a look at the "brain tan look" leather that Crazy Crow sells. I've never used it so I can't advise on how it will hold up.
