The grain in the planks looks to be pine. Was that what most of the lumber and poles were?
That's an admirable shaving horse there to the right of the stove.

The logs are all southern pine, except for two oak sill logs. Loft area is rough sawn oak from my neighbors dads sawmill, cut over 40 years ago. The roof and floor boards are true 1x12 rough swan pine from a local sawmill. The porch boards are Cyprus

The shaving horse is a beast out of a barn in upstate NY. It may date to the 18th century
