Word of caution, bobcat is disgusting (at least if you eat it raw) the racoon tasted like pork cooked in apples
My all time favorite is badger salted and roasted over a fire, it has a flavor all it's own, and it is a good one.

Agreed. As a younger man, when we couldn't gig any, we could get them from the Dandy Inn on Fridays. Good eats, great memories.Whoo boy, I can sure enough make myself miserable on the fruits of a good frog hunt.
There's a bayou just south of me that builds bully frogs with legs the size of KFC drumsticks.
Didn't kill but recently ate some alligator. Very white and tender but completely tasteless. Won't say never again but not motivated to try again.Had to think about this. So far recollect: deer, squirrel, rabbit, beaver, groundhog, frog, crawfish, fish, duck, antelope, bison, maybe more. So far, still like domestic beef the best.
Horned pout a New England Saturday night favorite.I haven't gone through the whole thread (yet) but were Bullhead catfish mentioned? How about barbecued Alligator gar?
