I’ve had muskrat, pack rat, gopher coon and fox. Fox is nasty and I didn’t make it to second bite. I never have managed ”˜possum. Coon on the other hand makes a fine meal, tasting to me much like bear.
A long time ago, I read an article in a traditional magazine about a guy who was isolated somewhere (can't remember where) who was trapped after a snowstorm. He survived on fox meat. A rabbit doesn't have enough fat on it to survive on, but apparently a fox has somewhat more. Taste wasn't discussed.
Salt water brine for 12 hours helps with meat toughness with fox. Additionally, adding lemon juice or apple cider vinegar to it will add additional tenderness to the meat. Cooked greens seem to blend well with fox. Stews with lots of mushrooms and other spices is good as well.
