I'd like some ideas on what sort of spares to have on hand for C&B revolvers. I have Colt 1851 Navy, 1860 Army, and Remington 1858's. What parts wear or break where one should have spares. Nipples seem a logical choice, and what experiences have been had with the Ampco bronze and the stainless steel versions.

You can buy replacement parts sets that come with all the small most likely to break parts included. The price is usually reasonable enough.

Besides nipples the two things that seem to break most on mine are the bolt/trigger spring and the hand spring.

I don't know what model 1858 you've got, but Cabela's sells a spare parts set for the Pietta 1858 that has a hand and hand spring, trigger and bolt spring, trigger, mainspring, and a couple other things as well. It's like $28 or something. I think you probably have to do some handfitting to get some of the parts to fit your individual gun, but it's a pretty good deal for a whole set of stuff.

Hand spring broke on my '51 Navy Colt copy.
I had a hard time to find another one and made one from a bobby pin.
Worked for years!

Hand spring, bolt/trigger spring and possibly the hand as the tip often wears down giving you incomplete carry up.
