Does anyone know how to get wood to look like this?

You'll have to be a bit more specific. Are you talking about the stock sheen? The color?

You'll have to spend a chunk of money for that grade of maple.

As above. Buy expensive curly maple. Get the surface very smooth and whiskered using your favorite techniques. Pre-stain with tannic acid and rub back. Stain with aquafortis or analine dyes. Seal and finish.

I like a mellow finish but everyone has their own taste.

I'd say that's what we're looking at. It's also red maple which is fine for an undecorated gun, but if you're going to carve it you should use sugar maple.

It's also been steel wooled or scraped after the heat treatment to enhance the contrast of the dark and light stripes.
