I dress the squirrel, rinse it off, and put it in a skillet with a little water. I place a too small for the pan lid down over the squirrel in the bottom of the pan. This will steam the squirrel tender pretty quickly. From there, you can go in a lot of directions and end up with high quality eats. Steam one and then pour a can of good baked beans over it. Cook that in the oven or over the fire with a lid for a while. If you cook too long, the squirrel will fall apart and you will have bones in your beans!
