Here's a favorite of mine...love hash 'n eggs of any kind, but especially venison. This one does not include potatoes. This can be done over a camp fire or in the oven...enjoy!

Dutch Oven Venison Hash

1 ½ lb finely diced venison
2 large yellow onions, diced
1 large green pepper, diced
2 diced tomatoes
2 tsp salt
1/3 tsp chili powder (ancho if available)
½ tsp granulated garlic
1/3 tsp dried oregano
pinch of chipotle powder
1 small red pepper, diced
½ cup chopped chilies (red or green)

Preheat Dutch oven over coals or in oven at 350. In large skillet cook and stir venison, onions and peppers until meat is brown and vegetables tender. Drain off the fat and stir in tomatoes, salt, pepper, chili powders, garlic, oregano, red pepper and chilies. Heat through and pour into Dutch Oven. Bake 1 hour stirring a couple times while cooking.
