Sure there are canals here!
In the Phoenix area there are 2 major and 1 minor canals extending East to West clear across the city.
Originally, the canals were built by the ancient indian tribes who lived in this area extending North and South from the Salt River. These ancient canals were re-dug in the late 1800s and are the basis for the name, Phoenix (which was named for the mythological bird that arose from his own ashes).

They are still fed by the Salt River (which was dammed by Roosevelt Dam on the North side of the Superstition Mountains) and run almost all year long (except when their cleaning them).
They provide much of the drinking water for Mesa, Phoenix and Glendale as well as irrigation for thousands of acres of farmland (which is turning into thousands of acres of houses) on the West side.

In a more Forum oriented topic, Beaver were trapped on the Salt River during the mid 1800s and some of the first North American white men were killed just West of Phoenix by the local Indians during one of those early trapping ventures. :)
