OOOh, lovely! I have a Maltese friend; his wife cuts the hare up into tasty morsels, applies a spiced breadcrumb coating, then shallow fries the pieces until crispy. Back in the day, when I got a hare, it was straight off to Mary and Joe's for a free dinner! Much darker than rabbit flesh but preferred by some.

It’s ears looks like jackrabbit ears.
When I used to live up in the high elevations in Colorado, one fella I knew and worked with kept telling me of some very large rabbits up in one area. He called them Alpine Hares that hangs out just about at timberline. Being a hardcore rabbit hunter back then I had a difficult time believing that any wild rabbit could get as big as he stated they were.
After months of hearing about this and after the snow melt, I finally talked him into taking me up to that location. Sure enough, we came around the edges of some brush and I saw one of those things. It was so big that at first I said “look there’s a baby deer”, until it took off running. Biggest darn rabbit I’ve ever seen.
Brit, perhaps that’s the same kind of rabbit?

We do have on uplands the mountain hare, also called blue hare.It’s ears looks like jackrabbit ears.

That's about the size of a big Jackrabbit here. They are also hares. I've shot a few when asked to but never have eaten one. They only live in our western states so I'll probably never get a chance to try aussie pete's recipe.

That's called a swamp rabbit around here.

I didn't say which species it was, just what it was called back when I was a kid.
Ed you ran into Snowshoe Hares. Down home in the swamps of Ms. where i am from . We hunted the big ones called Cane Cutters, swamp rabbits. They were are rabbits you can tell by their ears

Not the same! rabbits have smaller ears that was a type of hare!
