Well I tried to do an all fatty goat meat summer sausage I think the taste will be good but it did not bind as well as if I had done 1/2 or even 1/3 pork. Or I may have over cooked it a bit. Anyone try a lean meat only summer sausage, I have done with deer it came out a bit dry like hard salami. It was good if you sliced it thin.
