Most of those cans of "air" are actually liquid tetrafluoroethane, the working fluid in your refrigerator. The stuff boils at about -15F at normal air pressure. Inverting the can puts the liquid right on the steel, where it boils away instantly and does a great job of thermal shock.

And Wick, thanks for all the great info on iron chemistry. Maybe I'm just weird, but I love that stuff.
