As the founder of this thread, I am very amused at the direction it has taken. Seems a bit like Frankensteins monster!

They're not organs but the tender loins are in the abdominal cavity and they are about the best cut of meat on every animal I've ever taken.
 
The last time I had deer heart was a couple of months ago. A friend in Virginia gave me three frozen deer hearts and I found a recipe online to pickle them. They were quite tender and tasty. Have also boiled heart in the past, chilled it and served sliced very thin with horseradish sauce on crackers. Texture and flavor similar to roast beef.

I got a deer this past Saturday & saved the heart. I've never had it before & always thought it would be tough. I cooked it Monday and it was very good, surprisingly tender.
