I think that the official meat in the good old USA has to be BACON, either smoked or un-smoked!

To me, there is nothing better than bacon frying over an open campfire with some "cackle berries" and 'fried tatters for breakfast.

Ya talk about green beans. Bacon cooked with green beans, onion, garlic and small new garden potato's can't be beat!

Mouth watering yet?...Lets hear your favorite use's of America's Meat!

By the way. I cure and smoke my own slab bacon!

Rick

How about a bacon and peanut butter sandwich anyone?

Bacon for president! And, vice president!

Rashers and rum, bacon and beans or dried peas, bacon wrapped cheese, or asparagus, or beef tips. Bacon and eggs, bacon in a biscuit, cold bacon in your haversack. Bacon on a burger , bacon in grits or on a ceaser salad. Bacon crumbled maxed with egg bater and used to cover scotch eggs.
Bacon is like stars in the heavens who can say what you favorite is.
We need an American Bobby Burns to sing its praise.
Howsomever, two thousand years ago the Romans said the best bacon grew on Tuscan oak trees. I don't know if we can adopt it as our own.

If it's un-smoked,, it ain't bacon,, it's side pork.
Interesting. We do call it side pork if uncured,at least that's what my dad taught me, but call hips hams if it's cured or not. English is a make believe language made with out logic. Tolkien elvish or Klingon makes more sense

It would be easier to list ways that bacon isn't appropriate. (Nothing comes to mind at the moment except, maybe, lemon merengue pie.)One of my favorites: crisp bacon and fresh blueberries between buttermilk pancakes, plenty of butter and REAL maple syrup, with an over easy fried egg on top. Cold milk and good coffee to drink. With diabetes I can only do this a couple times a year but it is always a treat.

Excuse me while I drool.

Bacon is a favorite in our home, we run through 12-16 pounds a month.

One time at church someone handed me a vanilla cupcake with some peanut butter frosting and these little red crisps on top. It was bacon! Yep, bacon on a cupcake! It was delicious and would have been better with at least a whole slice! :rotf:

Later this week we're going to wet some lines along the shore and if we pull in some whiting (Gulf Kingfish), we'll impart bacon into the flavors in some manner.

Bacon in a pot of cornmeal mush with the grease added for flavor - excellent camp breakfast. I never go on a "trek" without a nice piece of slab bacon....

So is the official meat of Canada called Canadian Bacon.

Yeah, you take a good sized jalapeno, slice it lengthwise half way through it's width, and remove the seeds. Close it up and Stuff with cream cheese, and then wrap the outside with bacon, and bake at 350 degrees until the bacon is done. Remove and allow to cool some before eating.

They are also called armadillo eggs, BUT I've also been told that armadillo eggs are the same as the above except you cover the stuffed pepper with sausage (similar to a Scotch Egg), instead of bacon.
