Gunpowder Tea is a form of green tea authentic to the 18th century in the colonies.
Many people make green tea wrong, and thus really make gunpowder tea wrong. Unlike coffee or black tea, one does
not pour water straight from the boil onto the tea, or worse one does not drop the tea into boiling water and then remove that water from the heat.
Green tea is supposed to be steeped in water of about 180º-190º temp, so boil the water and allow it to cool for about five minutes before adding the tea.
When making gunpowder tea, use a small amount. For a pint of water you want about enough tea to cover a quater coin if it was held flat in your hand, no more. Some websites say a teaspoon for 6 - 8 ounces, and I'd say more like 16 ounces per teaspoon. For the best tasting tea, you nead to decant the tea from the leaves after about 3 minutes, but I just use a little less tea, and the leaves settle at the bottom of my cup.
Gunpowder tea when made too strong will give you a very smokey aroma and very strong flavor, and when dumped into boiling water the bitterness is highly increased.
I like it as a little goes a long way, so takes up very little room in my pack, but gives caffeine and anti-oxidants.
