Some times the toughest prices of meat have the best flavor. I used to keep chocked and let them free range as they were better in the garden then insecticides. They also loved my compost and my bunny butchering.
I butchered them young but always had a few I would let get pretty mature. A might stringy but tastier

Frankly, I'd rather have a BBQ'd chicken slow cooked over a smokey apple wood fire.
