How is the best way to make fried T&O over camp fire ? What is simple does not need to be PC.
 
Easy, If i am in a long term camp i use a dutch oven or iron fry pan. If i am packing in light i have an 8" steel pan that works great. I generaly use butter for cooking or light olive oil for pack ins. Watch your temp on the iron or it will burn.

Iron skillet, plenty of grease.Lard is better for ya.. :grin: salt and lots of black pepper.Cook till tender, and pig out!........YUM :thumbsup:

I like to fry the potatoes in a cast iron skillet until they are crispy/nearly done, then add the onions. Added before this point makes the potatoes overly wet/mushy and ends up burning the onions.....
 
NWHunter, you been looking in my kit?? Once in a while I may toss in some nice pot roast or a cut up peice of steak YUMMY Still! :thumbsup:
 
..for a twist on the recipe, fry them 'taters first, then add shredded/chopped cabbage with the onions. Sprinkle in some caraway seeds..
 
Any of the abved will do fine, for an extra treat toss in some sliced apples toward the end.
 
I would rake some coals out to the side and set my skillet on some rocks above the coals. I think that if you put your pan right over the fire it will be too hot.

Bacon grease tastes best. Onions in last. Green chilis help out. We like Seasoned Salt that we mix Cayenne pepper in for seasoning.
 
Then put them in a big bowl and fry up a mess O' eggs over easy and sausage. I'm getting hungry now.
 
I just got back from camp (unfortunately kids set the bottom of the mountain on fire) and I cooked them in bacon grease in large skillet with diced green pepper and sliced smoked sausage with 6 eggs. miteee tasty.

Frying taters and onions on a camp fire
requires three things as an absolute must:
#1 cast iron skillet
#2 bacon grease
#3 black pepper
I agree with others add the onions and most of the black pepper late. Save the salt,the bacon
grease usually takes care of that,if not add it
when served.One thing I find to spice it up is
some diced green pepper added prior to the onions.
Like Emeril says: "Pork fat rules".

Fried taters and onions in pig fat don't need nuttin else! :wink: Apples, seeds,and other stuff :surrender: If we have to have anything else......Make mine a side dish of fried Okra.Uh! and a chunk of cornbread :thumbsup:
 
Perhap' everybody is assuming this, but way I do it is to boil whole taters first till most done, let em cool, then slice and dice and proceed as above. Makes the whole thing quicker and the taters come out crispier.

PS, they said pig fat, but as we're in the mountains, I'm sure they meant bear fat. :rotf:
 
I like to serve with slightly warmed smoked salmon
