I just ordered a Fusil Dechasse with grade 3
Curly maple. I don't worry about period correct I just build them to suite me the best I can. Ordered from
Pecatonica. Still got a late lancaster 32 cal flintlock coming this week from Pecatonica also.
 
Good choice for a gun! I bought a used one several years ago and I enjoy using it. I like the fact that it is a smoothbore and is period-correct for the 1700's and early 1800's. It shoots lead birdshot pretty well and is fun for shooting clay targets.
 
I would go with the 44" barrel version, with walnut stock, it needs some simple cosmetic lock work and as stated by otheres is not a weekend of assembling parts but Tow can do some of it or you can find a ML builder to help you as I did since there are some things I am not comfortable or physicaly up to, with this set of parts and a little research you can have about the most HC French hunting gun ( with the cows foot stock)available and it should be worth at least double the parts price when finished. If you want a gun that kinda looks like a French hunting gun of the first half of the 18th century there are other options already assemlbled that will probably loose 20 percent in value by the time they get to your door, it all depends on what you really want.
 
I never have been able to see a cows foot in a French gun.
Guess the old-timers were trying to reference the drooping curved buttstock, but it's confusing to us today. They also used an real cow's knee (actually just the hide) to craft a waterproof lock cover for wet hunting conditions. It could simply be slid back onto the wrist when ready to shoot.
