After reading all the replies I had another look at my rifle. It seems the cock is contacting the wood and tilting the pan away from the barrel, so removing some wood would seem the right thing to do.
Any ideas on matching the color on the stock where I'll be removing the wood? Thanks again!

Use some walnut stain, and remember that when you top the stain with an oil finish, it will darken a bit more. Matching the colors is almost impossible without stripping down the entire stock and restaining and refinishing it entirely. I don't worry if its a bit lighter. It looks like wear to the casual observer, and , in a way, it is!

Just stain the cut out with something that will be approximately the same color as the rest of the stock. Put a little varnish or some kind of sealer on the part you stained. Don't worry to much about matching the color exactly because the cut out is behind the cock and no one will even notice a small difference in color unless you mention it to them.
