New to bp shooting, just bought an Uberti Walker (currently have a piano 1858 Remington and a 50 caliber muzzleloader) having trouble getting powder up here and started using pyrodex pellets .44/30 and I really like them they seem to punch harder too and I was concerned about using them for my Walker as it won't fill the chamber. Also what about the possibility of using two (if they fit for hunting) or would that be just dangerous

I would be a little nervous using 30 grain Pyrodex pellets either singly or doubled in a Walker. Check your manual, it should have instructions about that sort of thing. The Walker is capable of shooting a sixty grain charge, but it isn't a pleasant experience for most folks. Not filling a chamber is another issue fraught with some level of risk.

If it were mine, I would get some granular powder (either black powder or Triple 7... 3f) and shoot maybe fifty grains at most.
Problem is black powder even granular imitation black powder are almost impossible to find in the communist state of Illinois
 
Welcome, from North Carolina! I am not sure I have ever heard of anyone use Pyrodex pellets in a cap and ball wheel gun…interesting.
They work really well in my Remington New model army, they make 44 caliber 30 grain equivalent specifically for pistols, picked up The Walker today and the plunger will actually seat the ball far enough back in the cylinder to eliminate the gap as long as it's safe for the ball to be seated that far back I'm not sure.
