Welcome from East Anglia. Given our rather peculiar gun laws, I don't actually build anything, although I'd dearly love to. Looks like you do most of the things I would have done if I'd been born next door to you, so I'm looking forward to hearing what you are up to. As for building a gun - well, it has already been mentioned that there are a few world-class gunmakers here, and a special part of the forum to learn more about how they go about things. I never get tired of reading their posts nor of looking at their remarkable skills in fashioning wood, iron, steel and brass.

I forgot that you are new here. Nope, the only things not generally available here on mainland GB are cartridge-firing handguns and centre-fire semi-auto rifles and carbines. I have a reasonable collection guns, which includes stuff I can mention here - a Parker-Hale Whitworth rifle, a Parker-Hale Musketoon, a Pritchett Volunteer rifle and a Ruger Old Army revolver. I also have three other BP rifles, but they are not 'discussable' here, and another sixteen rifles and a 'kinda' handgun. I also have a Youtube channel - tac's guns, where you can see some of them and others.
 
I signed up for this because as I am getting together the materials for this build, I am doing research and wanting to make this as authentic as possible; I am sure many of you have taken the same approach. Currently, the original .50 Hawken online images are few and far between and not always good details. I want to get everything together before I start and have a clear plan. I have been thinking about stock color and stains. Any thoughts? I am not touching this kit until I have thought this through completely and have a plan to work toward. I am already seeing that I have to change the shape of the front of the stock and the rod pipe and cap on the kit I bought. So I am here for advice good and bad and will sort all that out. I am sure you all will help sort it out. Thanks ahead for your help.
I would strongly suggest that you find the club in your narea, and get your hands on, and perhaps shoot as many 'hawkens' as you can. That will help youmake up your mind about haow you wantnyours to end up. Pictures aren't enough. Have fun with the build; but it probably won't be your last!

Already on the trail of all that. Right now even kits are hard to find.. after the rifle build probably a pair of matching pistols to build.
 
Welcome from the Colorado Rockies. Track of the Wolf has full scale blue prints for both fullstock and half stock Hawkens. Starting with a kit limits just how much you can tweak it to fit your length of pull and drop. Who sold you the kit? Pecatonica Longrifle Supply had a decent kit and Track has parts for assembling Hawkens. Good luck on your project. Stains will depend on whether or not you want to stick to supplies and techniques available to Sam and Jake or use of modern alcohol stains. If you can get to any museums with originals to handle it would sure help. Glorieta, New Mexico has a lot of original Hawkens. The Cody Museum in Wyoming has some too.

I lived in Carlsbad from 1981 to 2018. I shot with the black powder club down there. Now I’m in Southern Kansas.

You are in good company here. Probably 101% of the folks here are opinionated old guys with guns. (If you are confused about how or where I got the 101% measure of things, it is a number I learned to emulate from the "Bestest-ever-election!" of 2020, where just about every swing state had at least one city with a 101% voter turnout, which I learned we must always adulate. Unless that happens to be for a Republican)

Don't get my scots up. My family were sent here as a result of Culloden.
Now we are getting somewhere. I have hunted the NW Highlands with the original 1888 double rifle made for the particular estate we were on. Great place. There are more DNA Highlanders in North America than there are remaining in Scotland. The Highland Clearings ethnically cleansed the land of your people. Nice beret
 
It is not a beret, it is a bonnet. ;) Ask any Scotsman. Put a ball of yarn on the top and it's a Tam. Be careful there sir, we carry lots of knives. ;)
