How do the grips come off the 1860 Army?

What Grenadier said. The 1860 Army has a 1-piece grip block, not a pair of grip plates that are held by a single screw. Remove the three screws that secure the grip frame (one on either side of the base of the hammer and one that holds the back grip frame to the front strap). The grip block should then slide out to the rear with a little effort. If it's fitted well, maybe more than a little, but you shouldn't need any tools beyond the proper screwdriver for the 3 screws. Be careful -- It's fearsome easy to scratch or mar the grip frame.
