since we feed out and process a couple of calves a year, I have the butcher save the kidney fat which is very hard and render it down to beef tallow. I know most people do not have this opportunity, but if you have a butcher shop perhaps you can obtain some. render it by cutting up in small pieces and boil outside. makes a lovely hard white tallow that will not get rancid. Kidney fat tallow is hard, body fat will not work it is too soft.
