Grandson 14 received a new 1851 Nayv .44 cal for Christmas. Gun in plastic bag and covered in oil. How far do you tear down the gun to clean it? Other than removing the barrel and cylinder do you remove the grips and take the frame apart?

If it were my pistol I would take the nipples off the cyllinder and clean them real good, reapply a thin film of oil to the threads and reseat them. Take the grips off and just do a minor wipedown if there is a very heavy coating of shipping grease. Be careful you don't pop out any of the springs in the assembly. Make sure the barrel and cyllinder of the pistol is clean. Once she's all wiped down clean, a little oiling of your favorite type and you should be good to go.

Cleaning instructions all only say to remove the wedge by taping from the right side. Nothing is said about the wedge screw?

I've always gone for a full disassembly of "New" guns.
The packing grease/oils they put on those things is some heavy stuff.
(The factory has no idea how long an item will be in a warehouse or on the shelf)

I know it's hard for new owners, esp the young ones, to wait even a few hours to shoot a new gun.
At the very least get the nipples removed and cleaned, the cylinder internals and the barrel clean so a white patch comes out white. You don't want any oil at all remaining where the powder or caps will burn.

i cleaned mine pretty good, dry fired some caps instead of taking them out, but took the cylinder out and cleaned everything real well...
