The best I've seen for a long rifle was made by Dan Phariss. Maybe he will post it here. It is a threaded stem in the tang, with a heart shaped aperature, that is relatively small and does not look out of place on a flintlock.

Here is the one made by Dan Phariss. I don't recall all the details, but he would probably fill you in if you asked. It is windage and elevation adjustable. Dan, I hope you don't mind me posting this. If so, I apologize in advance.

Seems peep sights are more popular than many would think. They work very well for me. Being able to change out the size of the apperture on the Lyman 57 and the TC peep sights with Williams sight company replacement appetures is nice. I like to keep extra appetures in the cap box on my Tc Hawken rifles.
 
Dan said it was not yet finished when the photo was taken. There are also some file marks on it, and I believe he said the windage screw was a temporary.
 
This is the easiest peep I've ever done. A machine screw with a washer soldered in the slot.
Can be screwed up and down for elevation, front sight can be moved back and forth for windage.
Can be removed and a filler screw put in place of it. I like the ghost ring type peep but it's easy to use a solid piece and make the hole as small as you like.
