Ladies, I weigh 251 1/2 lbs now and will have to say that these recipes may just take me into founder territory. Thanks. rice has always been a PITA for me and I really don't cook that much so mebbe it (rice) will be an addition to the dry goods for the trailer shop. Cooked rice with 1/2 and 1/2 and some brown sugar and raisins eats awful good too.
 
For desert, I just saw this today and it sounded kinda good.. but I have not tried it...instead of water use apple juice, add a bit of chopped apple and a handful of raisins.. some cinnamon and a bit of butter and brown sugar.. :)

I very seldom ever use water at least not entirely.
I use either beef stock or chicken stock depending on what
I intend to add later. Have you ever tried rissoto(not sure
of spelling) cooks up just like rice only its kind of creamy.

I never use just water either... to much flavor to be had using other liquids....I dont us much risoto(sp) It is a type of pasta, that I have not played with much...


that recipe just prior I put up there kinda sounds like it oughta come out tastin a bit like apple pie, with rice (the kind mom use to make and bake in the oven :))
 
I have chicken boiling on the stove as I type... makine taquito's for dinner tonight.

they are some kind of filling(chicken, beef, or pork cooked and shredded) rolled up tight, in a corn tortilla, kinda looks like a cigar type shape, then fryed. They didnt turn out to good, I think the tortillas were to thick. I just threw it all in a casserole dish and it was good that way ::
 
When I cooked rice in a dutch oven I did it the simple way. I put four cups of water in the dutch oven and brought that to a boil. Then added two cups of rice. (I actually eat Basmati which is my favorite rice)

To the rice and water add one large cut up apple, some cinnimon, a little sugar (sweeten to taste or do it later) and some pears (we used canned pears), a teaspoon of olive or vegetable oil, and a 1/4 teaspoon of salt or a healthy pinch. Stir that all together. Then put the lid on and push that to the edge of the fire pit where it will stay very hot but not boil. Leave the lid on for at least 20 minute before you check it. After 20 minutes, check it and give it a stir sometimes it takes longer. Check the rice for tenderness. Sometimes it just takes longer. If the rice is almost done, then you can go on to the next part of the meal.

While the rice is cooking is when I get my steaks or chops out and put them on the fire to cook, trying to time the two (although I have eaten in courses..)

The rice will have a nice sweet fruity taste and is excellent in the morning with a little milk added to it.
 
The really great thing about rice is that it's so mild flavored that you can cook it with virtually anything edible and come out with something good. On the trail, just boil it with a slightly greater than equal measure of liquid and whatever's available for a "solid" meal or boil it with slightly greater that double the rice measure with whatever's available for a thick soup or triple (or more) for a thinner soup. Meat and veggies, meat without veggies, veggies without meat, just some hot sauce, WHATEVER - it'll be good, especially after a hard day's trek. Use your imagination - throw in your mocs if you're so inclined!! :crackup:
 
Do we have documention that it was widely used in the
1800 to say 1860 as a camp neccecity. Seems to me that if it were available they would use it, but if and where
did they get it?
