She has frozen sauerkraut in freezer bags many times before and it keeps well and tastes fine. It may not keep as long in a freezer on a refrigerator as opposed to a regular freezer because of the defrost cycles tend to promote some drying or freezer burn.

Most of the time, it doesn't last long enough around here to develop a problem.

We had Kielbasa with sliced potatoes and the sauerruben for supper last night. It was great. Too bad there wasn't any left overs.
