It was not that many hours. Hopefully all is OK.

The rack reminds me of an old buck I hunted in Iowa one year that had huge beams, but virtually nothing but some nubs on them. He looked very old. I had named him "beams."

I ended up disposing of the meat. Not happy about it, but I’d rather not chance it. I wouldn’t have had an issue with him hanging that same amount of time with a bag of ice in him, but not the way it played out.

Your nose while tell you a lot about the meat. Skin, cut a piece and sniff.

Then build a fire and roast a piece on a stick. Nothing like a taste test.
