    stock staining

    Don't sand the finish off, use a paint remover and let it do the work for you. Easy to use, just follow the directions. You said a Walnut stock, it will probally be dark enough with just an oil finish without any stain on it.

    Hand rubbed finish

    There is no need to scrape anything. Why risk scratching your stock. Buy some paint and finish remover and just follow the directions. It will do the work for you. Very easy to do, then apply whatever new finish you wish.
