I think I’ve about decided to give the Uberti Rem a try. I have some Pietta’s and have had Uberti’s in the past and believe both are nice, decent replicas but I’m probably going to try the Uberti Rem.
I really like mine .. I think I put a Pietta mainspring in mine because I felt it was stronger. My Pietta is the ACE which is a 3” barrel . The Pedersoli while being way more expensive is smoother but with my skill level and as a casual hobbiest , the uberti is fine. I would buy it from Dixie who really honors their return policy if you have any issues. Take it apart with good screwdrivers and clean and check parts for burrs & any problems. My $.02!

They are and I have bought quite a bit from them, but out of curiosity I emailed them about the $1500 target revolver and asked if it was Pietta and they said yes it was. Maybe, but I don't recall seeing a Pietta target 1858 and I don't think it would be that much if they did make one.
 
It seems like preference between Uberti and Pietta are split. I revisit this question every few years, and my perception is that both companies go through good and bad periods and put out good and bad guns during those periods. I read above that the Uberti is closer to the original size but the Pietta is a little bigger. I'm kicking around whether or not I even need another revolver, but if I get one it will probably be the plain old Uberti.

I like what Taylor’s sells with the case hardened frames. They’re nice looking revolvers but all on back order right now. I don’t really need the target sights. I will probably get something from Taylor’s [maybe?] depending on what is in stock when I do eventually buy. If not, I can be satisfied with just a blued frame model. Hopefully whichever Italian I buy will be reliable and shoot accurately.
 
I did buy a used Italian a while back, took a chance, but I won’t buy another used one again unless I can handle it before I buy because I almost got stuck with a pistol that you could shake vigorously and call up the chickens with it. The purchase wasn’t made here and it actually looked pretty nice judging by the photos but had wear problems most likely due to inadequate care. I did finally get my money back. Have to be really careful with buying used.

I have two Pietta 1858 remingtons, with 5.5 in barrel...Sheriffs model. They are both very nice!!
 
I’m no competition shooter but I do like the dovetailed front sight that Uberti puts on their Rem. I believe Pietta uses just the post front sight. Just want one that is pretty close to the original Rem that is possible in an Italian replica.
Pietta now puts a dovetail front sight on theirs also. I think my latest is 2019 manufacture.

I have guns from both makers new and old and they all have needed some work to bring them up to full potential. Every thing is there to make into top notch guns they just need some tweeks, refinements and in some cases new parts made of better steel . About the only thing I've run into that is not readily fixable is misaligned cylinder notch placement and even that can be fixed with a custom made offset bolt head in theory.
