Another corn treat

You have never lived unless you have had fried Chesapeake Bay oysters (Known as the best oysters in the world by the way) and hush puppies.
 
Well, raw you can if you like but I never did. My Dad once had an oyster boat and I would help him harvest sometimes. I have seen as many as 6 tons of oysters stacked in our back yard ---- all from the Chesapeake Bay.
 
The Virginia Institute Of Marine Science did a world wide survey of oysters a few years ago and determined that the oysters from Chesapeake Bay, particularly from the mid bay, were the worlds best and they certainly are as far as I am concerned and the ones I have eaten.
 
Some folks put chopped or minced onion in hush puppy batter.
Now....you have a bag of corn meal (I also use some white flour) for coating the catfish. After doing the catfish there is still some corn meal in the bag. Why throw it out???
So Hush Puppies came into being.
Mix up honey and butter and then dip a hush puppy in that and pop it in your mouth.
 
Crockett, try this. Corn meal, some egg, chopped onion, bell pepper, and use canned stewed tomatoes instead of water to make it all mix. Then fry them. With hush puppies, the final mix needs to be a little drier than if making corn bread.

Hush puppies were invented in Florida. I think we know best how to make them. There is more'n one way ta makem, but If they ain't from FL, they is imitation. Just kidding. I never ate one I didn't like, no matter where it was from.
 
The week before Thanksgiving, we were in Myrtle Beach and the in laws took us to some out of the way restaurants in some little coastal fishing towns south of Pawley's Island. I really don't like fried seafood, and getting it steamed or broiled seemed like asking for a first born. But the hush puppies.. in all their fried glory were to die for. I was so impressed with some of the side dishes and seafood casseroles that I bought the cook book at W.T Graham"s restaurant in McClellanville.
 
I never ate one I didn't like, no matter where it was from.

My first were at a Maryland restaurant, and they omitted the onion, still darn good. I've even had them at Long John Silver's fast seafood restaurant chain....while NOT the best, they weren't half bad even there.

I guess the only way to screw them up would be to incinerate them to the level of charcoal.

Wick, that Florida business trip sure opened my eyes. The February sunshine, pink hotels and palm trees proved I "weren't in Oregon no more," but the first time I had real Southern-fried catfish, hush puppies, fried plantain and Key lime pie for desert, I thought I gone to heaven for sure.
 
Years ago, RED LOBSTER offered hush puppies. They were about as good as they get, even rivaling home made. Then one day they were not on the menu anymore. They never brought them back. I like Capt D's OK when I can do no better.
