I'd be willing to bet that all incoming water that goes into the brewing process in the breweries you mention IS filtered to remove any microbial contaminants.

Some....Many....But not all.....Some old breweries were built directly upon their natural water source...and the water is not filtered....It may be treated....but not filtered...Some breweries water is so bad.....it has to be filtered and treated just to be made drinkable.
 
Fwiw, the little "local" brewery, where I was first stationed in BRD got their water directly from the "on site" springs. - Nothing was done to the water; the beer was unfiltered & NOT "Pasteurized" either.
(I must admit that I truly LOVED their special Christmas beer & that was available only from about the 10th of December to New Year's Eve.)

My delivery guy had a key to my flat, came in weekly to reload the fridge, took away the empty "flippy" bottles & then billed me at the end of each month for what had been consumed.
(Some "craft/micro brewery" is missing a bet to NOT copy that idea. - I'd happily give the deliveryman a key to my place to get GREAT beer & NOT have to go get it at Central Market.)
