Smells getting stronger, again they have clean smell, nothing off putting.

Malt Vinegar evaporating allot, dont know it I should top it up with water.
Coffee Vinegar thicker top.

Bottled it.

Heats been so high that its been evaporating, the culture grew much thicker too during the heat.

Taste is realy hard to describe, very smooth, kept taking sips to try and describe the taste, not of coffee however after 5 min theirs a slow slight taste of coffee. Its like a very smooth rich whisky maybe malt vinegar, no scratchiness in the throat as I keep tasting.

Looking forward to using it on a salad.

Tossed my Malt Vinegar.
Taste was bland and very hoppy, the hops dont go with vinegar, leason learned. Also the alcohol content was too high so the process was not compleate, did not have a strong vinegar smell, just light, have to make sure 7% is max.

My red wine vinegar turned out overly acidic too.... But, that was my own fault.
The dandelion ginger wine vinegar was a huge success.....

On to the next vinegar....
