These rifles weren't schimmels or southern style poor boys. They were a grade or two better than that.

There are videos of guys working in Indian gun shops making Brown Bess muskets and the like with little more than hand tools. I think this very closely approximates gun production back in the day. Based on what I saw in the videos, one gun a week would easily be doable. The speed at which they were shaping the stock and fitting parts was astonishing.
