1: What size balls am I going to need? .360?
I use .380 in mine. No chain fires
2: How much powder do these things use? 3F work best?
3F 20 gr. in mine.
3: Will bore butter work to seal the chambers?
It is the lead that seals it. Bore Butter helps keep things soft.
4: What size caps fit?
Mine use #10’s
5: Will I need wads? Will I want them even if I don't NEED them?
I don’t use them any more. Some folks like them.
6: What else do I need to know?
Don’t point it at any one you like.
7: Anybody know where to get a good pattern for a crossdraw slimjim holster to fit?

I don’t think that you would need a patttern, or if you want you could just make a pattern out of paper folded around the gun.
When I got my first cap and ball it was a Reb Model .36 SN# 13
No holsters I liked were available at that time. I made a paper pattern and used that to make what I wanted.
This is what I did with a homemade paper pattern.
