rifle options to pair with 1851 navy revolvers

The Colt Navy was usually caliber .36 (or .44 Army model), so I would start with Colt's New Model revolving rifle to utilize the same bullets. Made from 1855 until 1864 in a variety of calibers from .36 to .56.
 
1859&1863 Sharps which can be mentioned. Allin conversion, Henry, Rolling Block, and Spencer cannot be mentioned here but would be period correct
 
A half stock, percussion rifle.

Look up Jamestown Rifles, made in Jamestown North Carolina, hundreds of them went west. They were typically smaller .36-.42 caliber.
