Sugestions fo duck breast over campfire

I just got back from a duck hunt and the guys that were there did not want the ducks they illed. I took all the ducks and breasted them out. I am having a mini rendezvou and would now like to cook the breast for my friends over the campfire. If yall could any suggestions on the est way to coook them would be greatly appreciated. I hate people that kill stuff then dont want the meat. Why kill it. Oh well more or me and my friends. I really want this to be cool so any wild ideas are ok too on how to cook them. Thanks
 
I would sugest using a dutch oven. A large one will hold several breasts. I would add a few pieces of bacon or salt pork in the bottom, this will keep the meat from drying out. Add pepper to taste and any additional seasonings as appropriate. They can also be cooked over the open fire on a fork or stick. I would wrap bacon around the breasts again to keep from drying out the meat.This is based on cooking the whole breat as one piece. Another meathod that works great is to slice off the meat in strips and pan frying them in butter and seasonings, be sure not to overcook the meat.
Here is my thoughts on a meal for your mini rondy: Duck Breast, Sliced duck pan fried in Butter, salt,pepper, oregeno,basil,onion.
Wild Rice: cooked in a corn boiler.
Fresh baked bread or bisqets.
Corn on the cob if available, roasted on the fire.
Roasted apples with cinnimen and brown suger, butter.
This would make an unforgetable meal and is simple to do in camp.
 
You could also try slicing the breasts into thin strips and doing a stir fry with a little oil and chopped onions. Put the onions in first and get them almost done then add the duck strips for a VERY short time. DON'T overcook the duck.

That's what I was going to say...

I might add that wrapping strips of duck in bacon, sticking a toothpick through it and pan-frying that is also good. And a little lemon pepper never hurts...
 
Cut breasts into 1/2 cubes
pan fry in olive oil
drain oil
add a prego sauce or make your own sauce
mix with spaghetti or lasagna
salt pepper

In a dutch oven of coarse.

I know some will disagree, but cooking duck in restaurants over the last 10 years, a lot of people do overcook duck...it is perfectly acceptable to eat duck medium rare to medium (yup, I said medium rare to medium)....and, in my opinion, it tastes better!

You could pan sear those breasts in a skillet, then add some roasted leeks and blueberries (roasted together)...is the fat still on the breasts?

I whole-heartedly agree. I sear the duck breast the same as I would a piece of Ahi. Charred on the outside and rare in the middle.

I do my duck slightly more than this tuna, but not much.

My addition to the above -is marinade them over night in Italian dressing cut in strips -wrap 1/2 slice bacon around the duck + 1 thin slice of onion + 1 sliced jalapeno... tooth pick and grill..Makes a great appetizer at the Holidays.


Claude Your roast duck looks Great!..What did you use on the outside of the duck breasts ?
 
Place duck on a knotty pine board so it will rest 2/3 to 2/4 way down in to the dutch over . Board will be resting against side wall of dutch oven.
Place on coals with coals on top.
Cook 15 min per pound.
When done remove from coals.
Toss the damn duck away and eat the board!
