We always had a pickled beef tongue in the frig when young....it was our "lunchmeat". Peeled back the outer covering and then sliced it for a delicious sandwich. Yes....some parts of the tongue are "spongy" and they're usually at the base and aren't considered the better part.

We also had tripe fairly often because it along w/ tongue could be bought cheaply.

Our breakfast many AMs was calves brains and scrambled eggs....again, cheap food.

Still buy this "stuff" not because it's lower priced, but because it's good food that has tastes to my liking . The Great Depression many times "chose" the food we ate and for that I'm thankfull.....Fred
