oven on lowest setting door ajar. Reduces to nothing and rehydrates about perfect. Very enjoyable way to bulk up a meal. Couple cups of rice or dehydrated potatoes, can of sardines, cup of kraut and enough instant coffee for a litre sure makes a man feel rich and it all fits in your pockets, one pot if you can wait for your coffee. Just mix the dried kraut in with whatever your cooking.

True published story by a fellow named cushway who staked a pile of claims up north about how he lived on cold instant coffee and cold rehydraded cabbage leaves for 3 days while getting the jump on a big mulitinational mining concern in the eastern rockies. THat is where I got the idea.
 
I have a 10 tray stainless dehydrator would that work for the cabbage?
It works great for making deer jerky.

Yep! I dry cabbage in mine....use trays though or it will get stuck in the grates......I put mine in soup.

PA Dutch cooking does not generally compare favorably to similar dishes cooked in Germany. :shake:

Pork and Sauerkraut in Germany is delicious, particularly when served with Kartoffelknoedel (potato dumplings), rather than mashed potatoes. The PA Dutch equivalent that you describe is usually suitable only for "enhanced interrogation" techniques.

Now I am grossly generalizing, and I am sure to hear from someone whose PA Dutch relatives cooked/cook food worthy of a Michelin star or two, but it has always been my pet theory that the PA Dutch were those who were driven out of Germany for their lack of culinary skills.
 
After reading the posts here I was visiting with my wife about kraut and she mentioned mason jar kraut to make a small batch. I did a google on it and it is very simple and is good for making a small batch for someone that wants to give it a try. Just google "mason jar sauerkraut" and you will find a couple of sets of easy instructions. Good eating/

Now your talking high living! My wife makes it pretty regular.

If you need someone to compare kimchi notes with PM and I 'll send you a number, two things she loves to gab about are making kimchi and bread.

As instructed, I did a search on 'mason jar sauerkraut' and came up with a lot of good sites. The farm fresh cabbage will be coming to our local farmers market shortly and I am going to give it a try. One of those "it's so simple even I can do it" projects. The wife and I both love kraut, so if this works, we'll go to bigger batches.

Spence10, Thanks for starting this thread but I hope you realize you may be responsible for a cabbage shortage this winter. :grin:

I have a row of turnips that are sauerruben bound, but I had a bear to butcher & something my wife said about cleaning up made me think I had better get my hunting gear washed , mended, and stowed and maybe even finish the portable soup (made from slow cooked bear scraps & bones) Before I start another "project" :idunno:
 
Pig tails sauerkraut and knoedels. Man it has been too long. I know what I'll be making this weekend.
 
Pig tails...probably the only thing I will not eat.

Oh, wait, three things I won't eat...pig tails, string boiled dumplings and yam. And my dad kept putting all three in the same stew.

(by yam, I don't mean sweet potato, I mean the horrid rough potato like thing from Africa)
