If you've ever had canned pumpkin which I'm sure most if not all of us have you have basically eaten a squash pumpkin pie. The "pumpkin" that is used in the canning process is the Dickenson Squash, of course all squashes are basically either winter or summer squash including the pumpkin. The jack-o-lantern pumpkin we're all familiar with is a winter field pumpkin and not really all that good for cooking, not compared to the more succulent varieties.Love butternut squash, never tried it for pie. Sounds good!

A Cowboy Kind Of Thanksgiving
back in the day that stuff in had to be on the ATLANTIC COAST to get OYSTERS. jmho.Don't knock oyster stuffing until you try it. The secret? That's easy- real plump, good oysters.
My current stuffing? Cornbread with crumbled sausage, fried onion, chopped up onion added at the end, celery, bell pepper, and gravy.
QUESTION- I guess a "Pilgrim from Plymouth Rock" thing but succotash. Now it is yellow corn and lima beans. Not sure the local NDN's had lima beans. As I understand the Iroquois added venison so it was a "one pot" meal. I thought it would look neat to use Indian Corn and kidney beans. I've tried to find out what the original was but not much luck.
Where in Gods name did you find a White Castle in DC? I lived there for 35 years and never saw one until I went south into NC once with some friends.Not a tradition but one year when I was a kid we were in Washington, DC for Thanksgiving. Don't know who was responsible but neither of my parents made a reservation for a restaurant. We ended up eating our Thanksgiving dinner in a White Castle. To this day I can't sit at the table without thinking of those little square burgers covered in minced onion. Still a fond memory.

I am in TN and from CA and make it every year.What Thanksgiving traditions do you have that others don't understand or know of? We always have oyster stuffing with our turkey. A few pints of good fresh Chesapeake oysters get mixed in with the stuffing and baked in a pan. I think it is a mid-atlantic regional thing. When we talk about it people look at us like we are crazy, but it sure is good and my mom talks about her grandmother making it.
