Two similar dishes made by "the common folks" in Texas, "interior" Mexico & oddly enough in Venezuela/Columbia are what South Texicans call "stacked enchiladas".

Starting at the (usually heated!!) plate, stack a corn tortilla, top with refried/borracho beans, another tortilla, a layer of shredded meat, tortilla, a layer of cheese/chopped onions/cilantro, (repeat layers as often as you wish) & top with another tortilla & a layer of lettuce/tomatoes/cheese.
(Most places in "interior" Mexico & northern South American nations, the lettuce is replaced with shredded cabbage or another sort of greens. The chopped/shredded meat "down there" is often goat/mutton/horsemeat/monkey/"bush meat" & often mixed with leftover rice.)

Stacked enchiladas (or whatever the local dish is called in each Latin American nation) are CHEAP to make, a way to use up "leftovers", filling, nutritious & generally tasty.

Don't forget the fried egg on top. I don't know if they do it that way deep in the interior of Mexico but it is a common practice in the Mexican border towns and in Texas. The stacked enchilada reaches the pinnacle of perfection at a restaurant in the Dallas area called Abuelos. I have eaten them in many different places but have not found any place that can match the stacked enchaladas topped with a fried egg at Abuelos. YUM-O!!! :thumbsup:

I would venture that a pancake is a type of flat/grilled bread and not the other way around. All ships are boats but not all boats are ships :idunno:

Thanks for noting that. Most people I know would be pretty upset if they ordered a stack of pancakes and got a stack of tortillas instead. Pancakes have a light texture. Tortillas do not.

I'm not worrying about it, though. Some people who post here are quite stubborn, but that's okay. It takes all kinds.

The term "Broaden your Horizons" comes from the fact that...with every step, the horizon gets wider....
It's a big world....Take comfort in the fact that no matter where you go there is probably something resembling a pancake..... :grin:

As do some "cow pies" but I can't imagine being able to put enough syrup on them to make them palatable. :rotf: How much nourishment would be in one? I have no idea, perhaps a vegan survivalist might know. :haha:

Okay, I'm tired of beating this dead horse :dead: I think I'll look for some gun stuff on the forum. :hatsoff:

Vegan Pancakes

Ingredients
Ӣ1 1/4 cups whole wheat flour
Ӣ 2 teaspoons baking powder
Ӣ 1/2 teaspoon salt
Ӣ 1 1/4 cups unsweetened plain soy milk
Ӣ 1 tablespoon maple syrup, plus more for serving (optional)
Ӣ 1/2 teaspoon vanilla
Ӣ Cooking spray
Ӣ Fresh fruit for serving (optional)
Ӣ Jam for serving (optional)
Ӣ Soy yogurt for serving (optional)


Directions

1. Place the flour, baking soda, and salt in a medium bowl, and mix well.
2. Pour in the soy milk, maple syrup, and vanilla, and mix until smooth.
3. Heat a skillet over medium heat.
4. Spray the pan lightly with cooking spray. Pour a heaping spoonful of pancake batter onto the hot pan, and cook until bubbles form. Then flip, and cook the other side.
5. Make eight pancakes, and serve with fresh fruit, jam, soy yogurt, or maybe syrup.
