I use several coats of car wax. After i shoot it i clean with water and wax it. Butcher wax would be better but car wax is what i have.

If you wanted a old looking original worn Colt finish. Remove the bluing don't polish out the dings and do quick re blue with perma blue. It will give you that faded gray finish.
 
+1 for Birchwood Casey. I've used Naval Jelly but found it to be too aggressive. I also use a very fine wire wheel on my benchgrinder (it leaves a polished finish)! I bead-blast when refinishing to a matte look.
 
'51 Colts were steel framed with octagon barrels in .36 caliber. Your gun has neither and is a .44!

Here's a photo of one of mine. I used bleach to remove the bluing; you can control the action pretty well. The longer you leave it on, the more etching will take place. Incidentally, the gun is still unfired!
